- 225 g wheat flour
- 25 g cornstarch
- 35 g sugar
- 255 ml water
- 1 egg(s)
- 4 g baking powder
- 1 tbsp water
- chocolate sprinkles
- unsalted butter
- condensed milk
- mozzarella
Instructions
Preparing the martabak batter:
- 1Pour the sifted flour into a bowl.
- 2Add the sugar and salt and mix.
- 3Add the egg and mix again.
- 4Gradually pour in the water while whisking until you get a batter of even consistency.
- 5Cover and let rest for 2 hours.
- 6Mix the water and baking powder and add the mixture to the batter.
- 7Mix well.
Cooking the martabak:
- 8Heat a drizzle of oil over low heat in a pan.
- 9Pour in the martabak batter and cook for 1 minute.
- 10Grab the pan and swirl it to raise the edge of the batter about 1 cm all around the pan.
- 11Put back on the heat.
- 12When bubbles appear on the surface, sprinkle with sugar.
- 13Cover and cook for about 10 minutes (until the batter no longer gives off steam).
Assembling the martabak manis:
- 14Transfer the martabak to a rack.
- 15Melt a knob of butter on the surface and spread it.
- 16Add the chocolate sprinkles over one half of the pancake.
- 17Cover the other half of the pancake with grated mozzarella.
- 18Pour a little condensed milk.
- 19Cut the martabak in half and fold it.
- 20Serve immediately.
