Ingredients

  • 1.5 kg whole chicken
  • 6 shallot(s)
  • 5 clove(s) garlic
  • 6 candlenut(s)
  • 1 tsp coriander seeds
  • 10 g turmeric
  • 15 g fresh ginger
  • 10 g galangal
  • 2 stalk(s) lemongrass
  • 4 bay leaf(s)
  • 4 kaffir lime leaf(s)
  • 200 ml coconut milk
  • 100 ml chicken stock
  • 2 tbsp fried shallots
  • 1 tbsp vegetable oil
  • green onion(s)
  • red chili pepper(s)
  • salt
  • pepper

Instructions

Preparing the ingredients:

  1. 1Cut the chicken into 8 pieces.
  2. 2Peel the shallots, garlic, ginger, and turmeric.

Preparing the opor ayam:

  1. 3In a blender, put the shallots, garlic, ginger, turmeric, candlenuts, coriander seeds, and vegetable oil.
  2. 4Blend for a few seconds until smooth and even.
  3. 5In a large saucepan, sauté the spice paste until fragrant.
  4. 6Crush the lemongrass and galangal with a pestle and add them to the spice paste.
  5. 7Finally add the kaffir lime leaves and bay leaves.
  6. 8Cook for a few more minutes, then add the chicken stock.
  7. 9Add the chicken pieces.
  8. 10Simmer over low heat, covered, until the chicken is tender, for about 45 minutes.
  9. 11Add the coconut milk and mix.
  10. 12Adjust the seasoning with salt and pepper if needed.
  11. 13Add a little hot water if the sauce is too thick.
  12. 14Bring the sauce to a boil for a few minutes, turn off the heat, and add the fried shallots.
  13. 15Garnish with sliced green onions and red chilies.
  14. 16Serve immediately with white rice.
