Ingredients

For the chicken:

  • 250 g chicken breast
  • 1.5 l chicken stock
  • vegetable oil

For the soto ayam paste:

  • 4 shallot(s)
  • 6 clove(s) garlic
  • 10 g turmeric
  • 3 candlenut(s)
  • 0.5 tbsp coriander seeds
  • 1 tsp white pepper
  • 17 g galangal
  • 15 g fresh ginger
  • 3 kaffir lime leaf(s)
  • 2 stalk(s) lemongrass
  • 3 tbsp vegetable oil
  • 0.5 tsp salt
  • 60 ml water

For the topping:

  • rice noodles
  • egg(s)
  • spring onion
  • fried shallots
  • lime(s)
  • bean sprouts

Instructions

Preparing the soto ayam paste:

  1. 1Roughly chop the garlic cloves, shallots, and turmeric.
  2. 2Crush the ginger, galangal, and lemongrass with a mortar and pestle.
  3. 3Combine the shallots, garlic, turmeric, candlenuts, galangal, coriander seeds, white pepper, and water in a blender.
  4. 4Heat the vegetable oil in a pot and sauté the paste over high heat until it develops a strong aroma, for 1 to 2 minutes.
  5. 5Add the kaffir lime leaves, ginger, galangal, and lemongrass.
  6. 6Continue sautéing for 1 minute.

Cooking the chicken:

  1. 7Add the chicken stock to the soto ayam paste.
  2. 8Bring to a boil and add the chicken breast.
  3. 9Simmer over low heat for about 45 minutes or until the chicken is fully cooked.
  4. 10Remove the chicken from the broth once cooked and let it cool.
  5. 11Adjust the seasoning of the broth with salt if needed and set aside.
  6. 12Shred the chicken meat once cooled.

Assembly:

  1. 13Place the rice noodles, shredded chicken, eggs, bean sprouts, green onions, and celery leaves in a bowl.
  2. 14Pour in the hot broth.
  3. 15Garnish with fried shallots and squeeze the lime wedges just before eating.
  4. 16Serve with spicy sambal on the side.
