Ingredients

  • 1.5 kg beef chuck
  • 475 ml beef broth
  • 0.5 onion(s)
  • 4 clove(s) garlic
  • 4 guajillo chili(es)
  • 2 tsp ground cumin
  • 3 leaf(leaves) bay leaf
  • 1 bunch(es) cilantro
  • 0.5 tsp whole peppercorns
  • 1 tsp salt

Instructions

  1. 1Cut the beef chuck into large cubes of 7 to 8 cm.
  2. 2Season with salt.
  3. 3In a large pot, heat the sunflower oil over medium heat.
  4. 4Add the meat cubes and brown them on all sides.
  5. 5Add the beef broth, garlic, guajillo chilies, ground cumin, bay leaves, cilantro, and pepper.
  6. 6Bring to a boil, then reduce the heat and simmer gently, or cook covered in the oven at 170°C for at least 4 hours.
  7. 7Place the meat in a roasting dish.
  8. 8Shred finely with forks and adjust the seasoning with salt if needed.
