About this dish
Elote is an iconic Mexican street food that celebrates corn, a fundamental ingredient of the country's cuisine. It consists of cooked corn on the cob, usually grilled over an open fire until slightly charred and tender. Once cooked, the cob is coated with mayonnaise or thick cream, generously sprinkled with crumbled cotija cheese, a local variety, and drizzled with chili powder, salt, and lime juice. Some also add chopped cilantro. The whole offers an irresistible mix of sweetness, creaminess, saltiness, and spiciness. Traditionally, elote is placed on a stick, making it easy to enjoy standing up or while walking. It is a treat that is both simple and flavorful, deeply rooted in Mexican culture, and has become popular well beyond its borders.
