- 3 dried ancho chili(es)
- 500 ml beef stock
- 700 g ground beef
- 1 red onion(s)
- 6 clove(s) garlic
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tbsp ground coriander seeds
- 1 tsp cinnamon
- 1 tsp cayenne pepper
- 2 tbsp tomato paste
- 2 tbsp chipotle in adobo
- 1 can diced tomatoes
- 1 tbsp maple syrup
- 400 g cooked red beans
- salt
Instructions
Preparing the ingredients:
- 1Deseed the ancho chilies and cut them into small pieces.
- 2Finely chop the onion and garlic cloves.
Preparing the chili con carne:
- 3Toast the ancho chilies lightly in a pan.
- 4In a blender, pour in the beef stock and add the ancho chilies.
- 5Blend until smooth.
- 6In a large pan, brown the ground beef, seasoning it with salt.
- 7Remove the meat from the pan once browned.
- 8In the same pan, add the onion and chopped garlic and sauté until translucent.
- 9Add the cumin, smoked paprika, ground coriander seeds, cinnamon, cayenne pepper, tomato paste, and chipotle in adobo.
- 10Mix well and add the diced tomatoes, the beef, the beef stock, and the maple syrup.
- 11Season with salt and simmer covered for 45 minutes, stirring regularly.
- 12Add the beans and cook for another 10 minutes to warm them through.
- 13Adjust the seasoning with salt if needed.
- 14Serve the chili con carne with sour cream and chopped spring onions on top.
