Ingredients

For the chicken:

  • 6 chicken thigh(s)
  • 1 lime(s)
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 0.5 tbsp coriander powder
  • 1 tbsp cumin
  • 2 tbsp olive oil

For the vegetable filling:

  • 1 red bell pepper(s)
  • 1 red onion(s)
  • 2 jalapeño(s)
  • salt
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1.5 tbsp olive oil

For assembly:

  • 8 tortilla(s)
  • 500 g grated cheese

Instructions

Preparing the chicken:

  1. 1Debone the chicken thighs.
  2. 2Remove the skin from the chicken thighs and cut them into dice about 1 cm.
  3. 3In a bowl, place the diced chicken, the juice of one lime, garlic powder, smoked paprika, coriander powder, cumin, and olive oil.
  4. 4Mix well and set aside.

Preparing the vegetable filling:

  1. 5Cut the bell pepper, red onion, and jalapeños into small dice.
  2. 6In a bowl, place the diced red bell pepper, red onion, and jalapeño.
  3. 7Season with salt and add the chili powder, cumin, and olive oil.
  4. 8Mix well and set aside.

Preparing the quesadillas:

  1. 9Heat a little olive oil in a large pan.
  2. 10Add the vegetable filling and cook for 4 to 5 minutes, or until the vegetables start to color and are cooked but still crunchy.
  3. 11Remove the vegetables from the pan and set aside.
  4. 12In the same pan, cook the chicken for 7 to 8 minutes, or until fully cooked.
  5. 13Remove the chicken from the pan and set aside.
  6. 14Clean the pan and heat it over low heat.
  7. 15Place a tortilla in the pan, sprinkle generously with cheese, then add a little vegetable filling and chicken.
  8. 16When the cheese starts to melt, fold the tortilla in half and grill on both sides until golden.
  9. 17Repeat until you run out of tortillas.
  10. 18Cut the tortillas into four pieces and serve immediately.
