About this dish
Tortillas are soft, round flatbreads, iconic to traditional Mexican cuisine. They are usually made from nixtamalized corn (treated with lime) or wheat flour, depending on the region and culinary customs. Corn tortillas, with their more rustic flavor, are the oldest and most typical of central and southern Mexico. Wheat tortillas, which are softer, are common in the north of the country. They serve as the base for many iconic Mexican dishes such as tacos, enchiladas, quesadillas, and fajitas. Cooked on a comal (griddle), tortillas are enjoyed warm, often wrapped around a variety of ingredients: meat, vegetables, beans, cheese, or sauces. Simple, hearty, and versatile, tortillas are a staple of everyday food in Mexico.
