Ingredients

For the seasoned ground meat:

  • 500 g ground meat
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp Tajín

For the cheese sauce:

  • 50 g unsalted butter
  • 50 g flour
  • 500 ml milk
  • 400 g cheddar

For the nachos:

  • 1 packet(s) corn chips
  • 2 grilled corn cob(s)
  • 1 red onion(s)
  • 1 jalapeño pepper(s)
  • 1 avocado(s)
  • 1 lemon(s)
  • 200 ml sour cream
  • Tajín

Instructions

Preparing the seasoned ground meat:

  1. 1Heat the olive oil in a large pan, then add the ground meat.
  2. 2Break up the meat well, then season it with all the spices.
  3. 3Continue cooking for 4 to 5 minutes, stirring regularly, until the meat is fully cooked.

Preparing the cheese sauce:

  1. 4Finely grate the cheddar.
  2. 5Melt the butter over medium heat in a saucepan.
  3. 6Add the flour and whisk vigorously until smooth.
  4. 7Gradually pour in the cold milk while continuing to whisk to avoid lumps.
  5. 8When the mixture starts to simmer, stir in the grated cheese, continuing to whisk until fully melted and the sauce is smooth.
  6. 9Season with salt and pepper to taste.

Assembling the nachos:

  1. 10Carefully remove the kernels from the corn cobs.
  2. 11Thinly slice the jalapeño pepper and the red onion.
  3. 12Prepare the guacamole by mashing the avocado with the lemon juice, salt, pepper, and a pinch of Tajín.
  4. 13Arrange a first layer of corn chips on a large serving platter.
  5. 14Add the meat, cheese sauce, grilled corn, red onions, and jalapeño pepper in turn.
  6. 15Repeat the layers until you run out of ingredients.
  7. 16Spread the guacamole and sour cream over the top of the nachos, then sprinkle generously with Tajín to finish.
