For the marinade:
- 2 chicken thigh(s)
- 80 ml milk
- 250 g plain yogurt
- 1 tbsp sriracha sauce
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
For the coating:
- 225 g wheat flour
- 35 g cornstarch
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp celery salt
For the sauce:
- 100 g mayonnaise
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tbsp ketchup
- 1 tbsp Worcestershire sauce
For assembly:
- hamburger buns
- lettuce
- tomato(es)
- pickle(s)
Instructions
Marinating the chicken:
- 1In a large bowl, mix the milk, plain yogurt, sriracha sauce, smoked paprika, onion powder, and garlic powder.
- 2Add the boneless chicken thighs to the marinade, making sure they are well coated.
- 3Cover the bowl and marinate in the refrigerator for at least 2 hours, or ideally overnight.
Preparing the sauce:
- 4In a small bowl, mix the mayonnaise, smoked paprika, garlic powder, ketchup, and Worcestershire sauce.
- 5Mix well and set aside for assembly.
Cooking the chicken:
- 6In a shallow dish, mix the flour, cornstarch, smoked paprika, onion powder, garlic powder, and celery salt.
- 7Take a piece of chicken and roll it in the flour, making sure it is well coated.
- 8Dip the piece of chicken back into the marinade, then into the flour again, for two layers of coating.
- 9Repeat for all the pieces of chicken.
- 10Heat frying oil in a large pot to 180°C.
- 11Fry each piece of chicken in the hot oil for 12 to 15 minutes, or until golden and fully cooked inside.
- 12Place the cooked chicken pieces on a rack or paper towels to remove excess oil.
Assembly:
- 13Open a hamburger bun in half and spread a generous amount of sauce on both sides of the bun.
- 14Place a crispy piece of chicken on the bottom half of the bun.
- 15Add lettuce leaves, tomato slices, and pickles as desired.
- 16Serve immediately.
