Ingredients

For the cinnamon roll dough:

  • 240 ml milk
  • 63 g sugar
  • 7 g dry baker's yeast
  • 560 g wheat flour
  • 75 g cassonade (brown sugar)
  • 115 g unsalted butter
  • 1 egg(s)
  • 1 tbsp vanilla extract
  • 1.5 tsp salt
  • 0.5 tsp ground cinnamon

For the filling:

  • 85 g unsalted butter
  • 110 g brown sugar
  • 1.5 tbsp ground cinnamon

For the icing:

  • 115 g cream cheese
  • 30 g unsalted butter
  • 1 tsp vanilla extract
  • 1 pinch(es) salt
  • 240 g powdered sugar
  • 2 tbsp milk

Instructions

Preparing the dough:

  1. 1Melt the butter.
  2. 2Gently heat the milk until it reaches a maximum temperature of 35°C.
  3. 3Mix the warm milk, granulated sugar, and yeast in a large bowl or in the bowl of a stand mixer fitted with the dough hook.
  4. 4Let rest until the mixture becomes foamy, about 5 minutes.
  5. 5Add the rest of the ingredients.
  6. 6Mix on low speed until the dough begins to form.
  7. 7Increase to medium-low speed and knead until the dough is elastic and slightly tacky without sticking to your fingers, about 8 to 10 minutes.
  8. 8Transfer the dough to a large lightly oiled bowl.
  9. 9Cover and let rise in a warm place (about 24°C) until doubled in size, about 1.5 to 2 hours.
  10. 10Grease a 23x33 cm baking dish with butter.
  11. 11Roll out the dough on a well-floured surface into a rectangle about 30x60 cm.

Preparing the filling:

  1. 12Spread the softened butter in a thin, even layer over the dough, leaving a 1 cm border on one long side.
  2. 13Mix the sugar and cinnamon in a bowl.
  3. 14Sprinkle this mixture over the butter.
  4. 15Roll the dough into a tight log, starting from the long side opposite the unbuttered border.
  5. 16Cut the log into 12 equal slices about 5 cm wide using a serrated knife.
  6. 17Place the slices in the baking dish, cut side up, spacing them slightly apart.
  7. 18Cover and let rise in a warm place until they almost double in size, about 1 hour.

Baking the cinnamon rolls:

  1. 19Preheat the oven to 175°C during the second rise.
  2. 20Uncover and bake for 20 to 25 minutes, until the top is lightly golden.
  3. 21Let cool on a wire rack.

Preparing the icing:

  1. 22Beat the cream cheese, butter, vanilla, and salt in a bowl on medium speed until smooth.
  2. 23Sift the powdered sugar and add it to the mixture, beating on low speed until smooth.
  3. 24Add 1 to 2 tbsp of milk to adjust the consistency if needed.
  4. 25Spread a third of the icing over the still-warm rolls.
  5. 26Let cool for 5 minutes, then spread the rest of the icing.
  6. 27Enjoy warm.
  7. 28Store at room temperature for 2 days, covered.
