- 375 g wheat flour
- 175 g milk
- 50 g sugar
- 35 g unsalted butter
- 7 g dry baker's yeast
- 1 packet vanilla sugar
- 1 egg(s)
- 2 tbsp water
- 1 tsp vanilla extract
- 1 tsp salt
Instructions
Preparing the dough:
- 1In a small saucepan, warm the milk.
- 2Dissolve the yeast in the water and add it to the warm milk.
- 3Let rest for 10 minutes.
- 4In a bowl, combine the milk-yeast mixture, the egg, the softened butter, and the vanilla extract.
- 5Mix with a whisk.
- 6Add half of the flour, the sugar, the vanilla sugar, and the salt.
- 7Mix until you get an even dough.
- 8Add the remaining flour and mix again until fully incorporated.
- 9Knead the dough on a floured work surface for about 10 minutes.
- 10Shape into a ball, place it in a floured bowl, and cover with a cloth.
- 11Let the dough rest for 2 hours in a warm place, until it has doubled in size.
Shaping the donuts and proofing:
- 12Punch down the dough.
- 13Flour the work surface and roll out the dough to a thickness of about 1 cm.
- 14Using a cookie cutter, cut discs of dough (7.5 cm) and small discs (3 cm) in the center to form the donuts.
- 15Place the donuts on pieces of parchment paper on a baking sheet.
- 16Cover with a cloth and let rise for another 2 hours.
Frying the donuts:
- 17Heat frying oil in a pot to 180°C.
- 18Place the donuts in the hot oil using the parchment paper and gently remove it.
- 19Fry the donuts on both sides until nicely browned.
