Ingredients

  • 500 g clams
  • 120 g wheat flour
  • 120 g corn flour
  • 1 tsp salt
  • 1 tsp pepper
  • 0.5 tsp cayenne pepper
  • 240 ml unsweetened evaporated milk
  • frying oil

Instructions

  1. 1Mix all the dry ingredients in a large bowl until well combined.
  2. 2Dip the clams in the evaporated milk.
  3. 3Heat the oil in a deep pot to 175°C (350°F).
  4. 4When the oil is almost at temperature, coat a few clams in the breading mixture, making sure to cover them well.
  5. 5Don't prepare more than the pot can hold at once, so the clams can go straight from the breading into the oil.
  6. 6Drop the breaded clams into the hot oil to avoid a drop in temperature.
  7. 7Fry for 1 to 2 minutes, until nicely golden and crispy.
  8. 8Drain immediately on paper towels to remove excess oil.
  9. 9Season with a pinch of salt.
  10. 10Serve immediately, with tartar sauce.
