  • 500 g macaroni
  • 52 g unsalted butter
  • 52 g wheat flour
  • 750 g milk
  • 250 g cheddar
  • 250 g Emmental
  • 2 g nutmeg
  • 10 g salt
  • breadcrumbs

Instructions

Cooking the pasta:

  1. 1Cook the macaroni in salted boiling water according to the package instructions.
  2. 2Once al dente, drain and set aside.

Preparing the béchamel:

  1. 3In a saucepan, melt the butter over medium heat.
  2. 4Add the flour and whisk to form a roux.
  3. 5Cook the roux for 2 minutes.
  4. 6Gradually pour in the milk while continuing to stir to avoid lumps.
  5. 7Add the salt and nutmeg.
  6. 8Simmer the béchamel over low heat for a few minutes, stirring regularly.
  7. 9Add the cheddar and grated Emmental.
  8. 10Mix until the cheese is melted and the sauce is smooth.
