For the marinade:
- 4 chicken thigh(s)
- 120 g milk
- 350 g plain yogurt
- 1 tbsp salt
- 2 tsp white pepper
- 1 tbsp sweet paprika
- 1 tbsp garlic powder
For the breading:
- 450 g wheat flour
- 2.5 tbsp salt
- 2 tbsp sweet paprika
- 2 tbsp ground white pepper
- 1 tbsp mustard powder
- 2 tsp celery powder
- 1 tbsp garlic powder
- 2 tsp freshly ground black pepper
- 1 tbsp ground ginger
- 2 tsp dried thyme
- 2 tsp dried oregano
- vegetable oil for frying
Instructions
Preparing the ingredients:
- 1Separate the drumsticks from the chicken thighs at the joint.
Preparing the marinade:
- 2Put the milk, yogurt, salt, white pepper, sweet paprika, and garlic powder in a large bowl.
- 3Mix until smooth, then add the chicken thighs and drumsticks.
- 4Mix and let marinate at room temperature for 5 minutes, or ideally overnight in the refrigerator.
Breading the chicken:
- 5Put the flour and all the breading spices in a large container.
- 6Mix until smooth.
- 7Remove the chicken from the marinade, then coat each piece in the breading mixture, pressing lightly.
Cooking the chicken:
- 8Heat the frying oil to 180°C in a large saucepan.
- 9Gently place the chicken pieces in the hot oil (no more than 3 pieces at a time) and fry for 6 to 8 minutes or until nicely golden (the internal temperature of the chicken should reach 75°C).
- 10Remove the chicken pieces from the oil and drain on a rack.
