- 1 egg yolk(s)
- 4 anchovies
- 20 cl sunflower oil
- 4 tbsp olive oil
- 0.5 clove(s) garlic
- 25 g parmesan
- 1 tsp Dijon mustard
- 1 lemon(s)
- 10 cl heavy cream
- Espelette pepper
Instructions
Preparing the mayonnaise:
- 1In a bowl, put the mustard, egg yolk, lemon juice, salt, and pepper.
- 2Mix with a whisk.
- 3Pour in the sunflower oil in a thin stream while mixing to emulsify the mayonnaise.
- 4Once the mayonnaise has emulsified, add the olive oil and Espelette pepper and mix again.
Preparing the Caesar sauce:
- 5Grate the parmesan.
- 6Finely chop the garlic.
- 7Finely chop the anchovies until you get a purée-like texture.
- 8Add the parmesan, garlic, and anchovies to the mayonnaise.
- 9Mix well and add the cream to get a softer texture.
- 10Adjust the seasoning if needed and refrigerate until ready to use.
